The carefully selected oak barrels play a central role in the evolution of the grog. Available in different ages - 4, 7, 12 and up to 18 years - the barrels rest in a stone cellar, where the temperature and humidity create ideal conditions for a slow and balanced maturation. In this space of silence and serenity, the JBEY grog is protected from the outside, allowing time to play its part naturally and continuously.

Over the years, grog has established an intimate relationship with wood. It's a subtle dialogue in which the distillate gradually absorbs the essences of the oak, enriching itself with aromas and flavors. The fruity and natural notes of the sugar cane merge with woody, toasted and smooth nuances, creating a harmonious balance between freshness, sweetness and depth.

This ageing process gives JBEY grog a rare complexity and a distinct sensory richness. Aromas that had lain dormant gain expression, revealing layers of flavor that unfold with each taste. Each sip becomes a unique sensory experience, where tradition, terroir and the identity of a product crafted with time and dedication are recognized.

Faithful to the principles of craftsmanship and responsible production, JBEY opts for a limited production of around 2,000 liters per year. This choice reflects a clear commitment to quality over quantity. No sugar or any other artificial product is added, allowing the grog to authentically express the natural characteristics of the sugar cane juice and the genuine influence of the oak.

The end result is a grog with a striking personality, with an explosion of aromas on the nose and intense, balanced flavors in the mouth. JBEY grog is thus the fruit of a perfect union between tradition and excellence, offering connoisseurs and connoisseurs a memorable experience, deeply linked to the essence of sugar cane and the artisanal know-how that spans generations.
